Le zucchine ripiene
Ecco un piatto tipico della tradizione italiana, le zucchine ripiene. Quel profumino che sale dal forno e invade tutta la cucina mi riporta alla mente tanti ricordi della mia infanzia…e mia madre che urla “Tutti a tavola, è pronto!!”.

Ingredienti
  1. 5 zucchine medie
  2. 2 carote
  3. 6 noci
  4. 8 pomodorini
  5. 1 cipolla media
  6. 4 spicchi d’aglio
  7. 2 cucchiai di farina di ceci
  8. 1 peperone rosso
  9. olio evo
  10. una manciata di prezzemolo
  11. maggiorana
  12. sale
  13. pepe
Instructions
  1. Sbollentare le zucchine in acqua leggermente salata per circa 10 minuti o a vapore (preferibile).
  2. Dopo averle lasciate raffreddare, tagliarle in due e svuotarle della polpa con un cucchiaino.
  3. In una pentola far dorare l’aglio tritato e la cipolla tritata, aggiungere le carote tagliate finemente e la polpa delle zucchine (schiacciata con una forchetta) e far soffriggere qualche minuto.
  4. Aggiungere al soffritto i peperoni, i pomodorini tagliati insieme alle noci tritate grossolanamente e alla maggiorana, sale e pepe e lasciar amalgamare per qualche minuto.
  5. A parte mescolare la farina di ceci con poca acqua bollente fino a formare una pastella un po’ densa.
  6. Togliere dal fuoco il composto e amalgamare con la farina di ceci.
  7. Posizionare sulla teglia le zucchine, riempirle, spolverare con un tritato di noci, prezzemolo e sale, aggiungere un filo d’olio e infornare a 200°C (350 F) per circa 20/25 minuti, fino a raggiungere la doratura desiderata.

  7. 2 tablespoons of chickpea flour
  8. 1 red pepper
  9. extra virgin olive oil
  10. a handful of parsley
  11. marjoram
  12. salt
  13. pepper
Instructions
  1. Blanch the zucchini in salted water for about 10 minutes or steam (preferable).
  2. After cooling, cut them in half and scoop out the flesh with a teaspoon.
  3. In a saucepan, brown the chopped garlic and chopped onion, add the finely chopped carrots and zucchini pulp (mashed with a fork) and fry a few minutes.
  4. Add the fried peppers, chopped tomatoes along with the coarsely chopped walnuts and marjoram, salt and pepper and allow to stir for a few minutes.
  5. Pour the chickpea flour in a cup of boiling water, stirring to form a thick batter.
  6. Remove from heat and add to vegetables in the saucepan.
  7. Place the zucchini on a baking sheet, stuff them with the mixture and sprinkle with chopped walnuts, parsley and salt, add a little olive oil and bake at 200 ° C (350 F) for about 20-25 minutes, until you reach they start to brown.
